The amber, or white brown as it is sometimes called, is very similar to the white. The obvious difference between the two is the beautiful amber hue in the shell of the shrimp. The shrimp contains all of the same rich color and flavor as the white shrimp and can be used in almost any application. After cooking, the amber takes on a magnificent shade of pink.
